
Balsamic Roast Potatoes with Garlic and Thyme

Ingredients
- 300 mL Praise Balsamic Dressing
- 100 mL Olive Oil
- 2.5 kg Potatoes (Kipfler), skin on washed
- 80 g Whole Garlic cloves -crushed
- 10 g Fresh thyme, leaves picked
- 2 g Salt and pepper
Method
Step 1
For the potatoes, use any firm, waxy potato. Kipfler are particularly good for this. Give them a good scrub before cutting them in half length ways depending and par boil them in salted water for around 15 minutes then drain and set aside.
Step 2
In a large bowl combine potatoes, Praise Balsamic Dressing, Olive Oil, garlic, thyme and season.
Step 3
Place into a roasting pan and roast in the oven on 200° C for around 20 – 30 minutes tossing and turning occasionally until potatoes are well cooked, golden and crunchy.
