
An Italian style chicken salad
Chicken, Fusilli and Avocado Pasta Salad

Ingredients
- 300 g ETA Mayonnaise (Eta Mayonnaise 21kg)
- 400 g Cooked poached or steamed chicken breast-torn into pieces
- 500 each Fusilli pasta, cooked and refreshed (raw weight*)
- 600 g Avocado, skin and stone removed, diced
- 300 g Cannellini beans, drained and rinsed
- 60 g Spring onion, chopped fine
- 20 g Parsley, chopped
- 1 g Salt and pepper
- 10 mL Fresh lemon juice
- 250 g Cherry tomato-cut in half
Method
Step 1
Place all ingredients into a bowl, add ETA Mayonnaise.
Step 2
Season with salt and pepper and fresh lemon juice. Mix well.
