Rustic Baguette with Roasted Garlic and Marinated Olives

Step 1

Preheat oven to 180° C

Step 2

Slice the root of the garlic bulb as close to the bottom as possible. Wrap in foil with 10ml of the oil, roast for 25-30 minutes or until tender.

Step 3

Once garlic has cooled slightly, squeeze the soft roasted cloves into a bowl, add 20mL of the oil and make a paste.

Step 4

Cut QBA Rustic Baguette lengthways and spread with the garlic paste.

Step 5

Bake for 8-10 minutes in the oven at 180° C or until crisp and golden.

Step 6

In a fry pan over a low heat, warm the olives in the remaining olive oil.

TO SERVE

Tear Baguette into large chunks and top with Parmesan shavings. Place warmed olives in a dish and serve on the side. Serve immediately.
